🍲 Chicken Soup with Jalapeño and Lime (Serves 8)

Prep Time: 10 minutes Cook Time: 15 minutes


Ingredients:

  • 2 cups shredded cooked chicken

  • 1 medium red onion, peeled and diced

  • 3 cloves garlic, minced

  • 2 medium carrots, peeled and sliced

  • 1 medium celery stalk, trimmed and sliced

  • 1 medium red bell pepper, diced

  • 1 jalapeño pepper, seeded and minced

  • 1 can (15 oz) no-salt-added diced tomatoes with juice

  • Juice of 2 medium limes

  • 8 cups chicken broth

  • 1 tsp ground cumin

  • ½ tsp ground coriander

  • ¼ tsp dried oregano

  • ½ tsp freshly ground black pepper

  • 2 tbsp chopped fresh cilantro

  • 1 medium lime, cut into 8 wedges


Method:

  1. In a large stockpot, combine all ingredients except cilantro and lime wedges. Bring to a boil over high heat.

  2. Reduce heat to low, cover, and simmer for 15 minutes.

  3. Remove from heat, ladle into bowls, and garnish with cilantro and lime wedges. Serve immediately.


💡 Tip: Roll your limes on the counter with firm pressure before juicing. It’ll release more juice and make your hands smell great.
