🥔 Curried Potato Croquettes (Makes 24 / Serves 12 as starter, 8 as main)

Prep Time: 20 minutes Cook Time: 25 minutes


Ingredients:

  • 3 tsp olive oil, divided

  • 6 medium potatoes, peeled and diced

  • 2 tbsp nutritional yeast

  • 2 tsp ground cumin

  • 2 tsp curry powder

  • 1½ tsp garlic powder

  • 1 tsp brown sugar

  • ¾ tsp salt

  • ½ tsp dried oregano

  • ¼ tsp ground coriander

  • ¼ tsp ground ginger

  • 1 tbsp low-sodium soy sauce

  • 2 tbsp chopped fresh cilantro

  • ¾ cup bread crumbs


Method:

  1. Preheat oven to 200°C (400°F). Lightly oil two baking sheets with 1 tsp olive oil.

  2. In a pot, boil the potatoes until soft (around 20 minutes).

  3. While potatoes cook, mix nutritional yeast, spices, soy sauce, and 2 tsp oil in a small bowl.

  4. Drain and mash the potatoes. Stir in seasoning mix and chopped cilantro.

  5. Place breadcrumbs in a shallow bowl.

  6. Form croquettes: scoop 2 tbsp mixture, roll into a ball, flatten slightly, then coat in breadcrumbs.

  7. Place on tray. Bake 12–15 min, flip, bake another 12–15 min until golden.

  8. Serve warm, with chutney or a little Greek yoghurt.

💡 Tip: For a crispier finish, give each croquette a light spray of olive oil before baking.
