🦪 Garlicky Steamed Clams (Serves 4)
Prep Time: 10 minutes Cook Time: 14 minutes
Ingredients:
1 tsp olive oil
1 small onion, peeled and chopped
3 cloves garlic, minced
4 tbsp dry white wine
1 cup chicken broth (or vegetable broth)
Juice and zest of 1 medium lemon
¼ cup chopped fresh parsley
½ tsp freshly ground black pepper
2 dozen small fresh clams, scrubbed
Method:
In a large sauté pan over medium heat, heat olive oil. Add onion and garlic and stir for 3 minutes. Add wine and stir for 1 minute more. Then add broth, lemon zest and juice, parsley, and pepper.
Add clams, stirring gently to coat. Cover and steam until clams open—around 7–10 minutes.
Discard any clams that remain closed. Serve hot with broth.
💡 Chef's note: Clams that stay shut after steaming should not be eaten—consider them a no-go.
