🍗 Lemon-Herb Roasted Chicken (Serves 6)
Prep Time: 10 minutes Cook Time: 1 hour
Ingredients:
1 tsp + 1 tbsp olive oil (divided)
½ tsp dried thyme
½ tsp dried basil
½ tsp ground black pepper
1 (4-pound) whole chicken
3 garlic cloves, minced
1 medium lemon (cut into wedges)
1 bay leaf
1 small onion (peeled and quartered)
½ cup dry white wine
½ tsp all-purpose seasoning
Method:
Preheat oven to 350°F (175°C). Lightly oil a small roasting pan with 1 tsp olive oil and set aside.
Combine thyme, basil, and pepper in a small bowl.
Brush chicken with 1 tbsp olive oil, then coat with herb mixture.
Place chicken breast-side up in pan. Stuff garlic, lemon wedges, bay leaf, and onion into the cavity. Pour wine into the pan. Sprinkle chicken with seasoning.
Roast for approx. 1 hour, until internal temperature hits 165°F and juices run clear.
Remove, let rest 15 minutes. Carve and serve warm.
