🍋 Lemon Poppy Seed Pancakes (Serves 4)

Ingredients:
¾ cup unbleached all-purpose flour
½ cup white whole-wheat flour
¼ cup sugar
1 tbsp baking powder
1 tbsp poppy seeds
Grated zest and juice of 1 medium lemon
1 cup almond milk
1 tbsp agave nectar
1 tbsp olive oil
2 tsp vanilla extract
Method:
In a medium mixing bowl, whisk together the flours, sugar, baking powder, poppy seeds, and lemon zest. Add all remaining ingredients and whisk until well combined.
Heat a nonstick skillet over medium-low heat. Ladle about ¼ cup of batter into the pan. Cook 2–3 minutes or until bubbles appear and the bottom is golden. Flip and cook another 2–3 minutes. If browning too fast, reduce the heat.
Repeat with remaining batter. Serve warm.
