🥒 Asian Cucumber Salad (Serves 4)

Ingredients:
1 large seedless cucumber, sliced diagonally into ¼" slices
1 small onion, peeled, halved, and sliced
1 clove garlic, minced
2 tbsp natural (unflavoured) rice wine vinegar
1 tbsp olive oil
1 tsp sesame oil
1 tsp low-sodium soy sauce
1 tsp agave nectar
1 tsp all-purpose seasoning
¼ tsp ground ginger
⅛ tsp red pepper flakes
¼ tsp freshly ground black pepper
Method:
Combine cucumber, onion, and garlic in a medium mixing bowl.
In a separate small bowl, whisk together all remaining ingredients. Pour dressing over salad and toss to coat.
Cover and refrigerate until serving. Best served chilled.
